Method

Salad Preparation

  1. 1

    Prepare the Vegetables

Using a vegetable peeler, peel the green papaya and carrot. Shred the papaya and carrot using a grater or a food processor. Place them in a large mixing bowl.

  2. 2

    Add Other Ingredients

Halve the cherry tomatoes and add them to the bowl. Trim and cut the green beans into 1-inch pieces and add them as well. Roughly chop the cilantro leaves and add to the mixture.

  3. 3

    Add Peanuts

Coarsely chop the peanuts and sprinkle them over the salad mixture in the bowl.

Dressing Preparation

  1. 4

    Prepare the Dressing

In a small bowl, combine the fish sauce, lime juice, and palm sugar. Stir until the sugar is dissolved.

  2. 5

    Add Garlic and Chili

Mince the garlic cloves and finely chop the Thai bird's eye chili. Add them to the dressing mixture and stir well to combine.

Combining the Salad

  1. 6

    Mix the Salad and Dressing

Pour the dressing over the salad ingredients in the large mixing bowl. Toss everything together until the salad is well coated with the dressing.

  2. 7

    Taste and Adjust

Taste the salad and adjust the seasoning if necessary, adding more lime juice or fish sauce to suit your preference.

  3. 8

    Serve

Transfer the salad to a serving platter and garnish with additional cilantro leaves and peanuts if desired. Serve immediately.
