Noodles Preparation

    Soak the Rice Noodles

    In a large bowl, soak the rice noodles in warm water for about 20-30 minutes until they soften. Drain and set aside.

    Stir-fry the Vegetables

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.

    Add Bell Pepper and Carrot

    Add the sliced bell pepper and julienned carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

    Add the soaked rice noodles to the skillet along with the soy sauce. Toss everything together for another 3-4 minutes until heated through and noodles are well coated.
