In a small bowl, mix together curry powder, turmeric powder, salt, and sugar. Set aside.

Prepare the vegetables by chopping green onions, grating the carrot, dicing the red bell pepper, and mincing the garlic. Place them in a large mixing bowl along with the chopped cilantro.

If using ground pork, cook it in a pan over medium heat until browned and fully cooked, about 5-7 minutes. If using crumbled tofu for the vegetarian option, pan-fry it until golden brown, about 5-7 minutes. Add it to the mixing bowl with the vegetables.

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the cooled rice and stir-fry for about 5 minutes until the rice is heated through and slightly crispy. Sprinkle the curry mixture over the rice and mix thoroughly to coat the rice.
