Prepare the Filling
In a large mixing bowl, combine the ground pork, shredded cabbage, grated carrot, chopped green onions, minced garlic, soy sauce, and sesame oil. Mix well until all ingredients are evenly incorporated.

Wrap the Eggrolls
Take an egg roll wrapper and place it on a clean, flat surface. Spoon about 2 tablespoons of the filling mixture into the center of the wrapper. Fold the bottom corner up over the filling, then fold the sides in and roll tightly to seal. Use a little water on the edges to help seal the wrapper. Repeat with the remaining wrappers and filling.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of egg roll wrapper into it; it should sizzle immediately.

Fry the Eggrolls
Carefully add the eggrolls to the hot oil in batches, avoiding overcrowding. Fry for about 3-4 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.
