Making Gelato
Prepare the Base
In a medium saucepan, combine whole milk, heavy cream, and granulated sugar. Heat over medium heat until the sugar is dissolved and the mixture is warm, but not boiling.
Cook the Mixture
Return the mixture to the saucepan and cook over low heat, stirring continuously until it thickens enough to coat the back of a spoon.
Cool and Flavor
Remove from heat, stir in vanilla extract, and allow it to cool completely. Refrigerate for at least 4 hours or overnight.
Churn
Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze
Transfer to an airtight container and freeze for at least 2 hours before serving.
