Preparation

    Prepare Tomato Oleo

    If you don't have Tomato Oleo, prepare it by mixing equal parts of tomato and sugar. Let it sit for 24 hours, then strain to extract the flavored syrup.

    Juice the Citrus Fruits

    Juice fresh yuzu and lemon to get the required amount of juice. Strain to remove any pulp or seeds.

Shaking the Cocktail

    Combine Ingredients

    In a cocktail shaker, combine 2 oz of Cavalle Gin, 1 oz of Juicy Yuzu Juice, 0.5 oz of Lemon Juice, 0.5 oz of Tomato Oleo, and 1 large Egg White.

    Dry Shake

    Perform a dry shake (without ice) for about 15 seconds to emulsify the egg white and create a frothy texture.

    Shake with Ice

    Add ice to the shaker and shake vigorously for another 15-20 seconds to chill and dilute the mixture.

Serving

    Strain and Serve

    Strain the mixture into a chilled coupe glass or cocktail glass. Optionally, garnish with a slice of tomato or a twist of lemon peel.
