Method

Steak Preparation

1

Season the Steak

Sprinkle the Florentine steak with salt and black pepper evenly on both sides.

2

Sear the Steak

Heat olive oil in a skillet over medium-high heat. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

3

Rest the Steak

Remove the steak from the skillet and let it rest on a cutting board for at least 10 minutes before slicing.

Salad Assembly

4

Prepare the Salad Ingredients

While the steak is resting, wash and prepare the salad ingredients: halved grape tomatoes, torn fresh mint leaves, crumbled gorgonzola cheese, chopped chives, microgreens, and arugula.

5

Combine the Salad

In a large bowl, combine the grape tomatoes, fresh mint, gorgonzola cheese, chives, microgreens, and arugula. Toss gently to mix.

Dressing Preparation

6

Make the Dressing

In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, salt, and black pepper until smooth and well combined.

Final Assembly

7

Slice the Steak

Once the steak has rested, slice it thinly against the grain.

8

Dress the Salad

Drizzle the creamy garlic dressing over the salad mixture and toss gently to coat.

9

Plate and Serve

Place the dressed salad on a serving plate, top with sliced steak, and drizzle hot chili oil over the top. Serve immediately.
