Method
Prepare the Dough

Mix Ingredients
In a large mixing bowl, combine gluten-free flour, eggs, olive oil, and salt. Mix well until a dough forms.

Knead the Dough
Knead the dough on a lightly floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
Prepare the Filling

Combine Filling Ingredients
In a bowl, mix ricotta cheese, grated Parmesan, cooked spinach, salt, and pepper until well combined.
Assemble the Ravioli

Roll Out the Dough
Divide the dough into quarters. Roll out one quarter at a time on a floured surface until thin.

Cut and Fill Ravioli
Cut the rolled dough into squares. Place a teaspoon of filling in the center of each square. Fold the dough over to form a triangle and press edges to seal.
Cook the Ravioli

Boil Water
In a large pot, bring salted water to a boil.

Add ravioli to the boiling water and cook for 3-5 minutes or until they float to the surface. Remove with a slotted spoon.
