Crust Preparation

Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until the crumbs are evenly coated.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the back of a measuring cup to pack it tightly.

Bake the Crust
Bake the crust in the preheated oven for 8-10 minutes until lightly golden. Remove from oven and let it cool while you prepare the cheesecake filling.

Make the Cream Cheese Mixture
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Add Sugar and Sour Cream
Gradually add the granulated sugar and sour cream to the cream cheese mixture, mixing until well combined. Scrape down the sides of the bowl as necessary.

Incorporate Eggs and Vanilla
Add the vanilla extract and eggs, one at a time, mixing on low speed until just blended. Avoid over-mixing to keep the cheesecake from cracking.

Divide the Mixture
Divide the cheesecake batter into four equal portions in separate bowls.

Add the lemon zest to one portion, raspberry puree to another, chocolate chips to the third, and pumpkin puree with cinnamon to the last. Stir each flavor into its portion until mixed.
Baking the Cheesecake

Spoon each flavored cheesecake mixture onto the prepared crust in layers, alternating the flavors.

Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly golden. The center should have a slight jiggle.

Once baked, turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour. Then refrigerate for at least 4 hours, preferably overnight.
