Cannoli Shell Preparation

Mix Dry Ingredients
In a large mixing bowl, combine the flour, sugar, cocoa powder, and salt. Whisk together until evenly mixed.

Knead Dough
Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll Out Dough
After resting, divide the dough into 4 pieces. Roll each piece out thinly with a pasta machine or rolling pin until about 1/8 inch thick.

Cut and Shape Shells
Cut the rolled dough into circles (about 5 inches in diameter). Wrap each circle around a cannoli tube and seal the edges with a little water.

Fry Shells
Heat the oil in a deep frying pan over medium-high heat. Fry the wrapped shells for about 2-3 minutes until golden brown. Remove and drain on paper towels. Let cool before removing from tubes.

Prepare Filling
In a bowl, combine the ricotta cheese and powdered sugar. Mix until smooth and creamy.

Add Flavorings
Stir in the dark chocolate chips, orange zest, and vanilla extract until evenly distributed.

Fill Cannoli Shells
Using a pastry bag or a spoon, fill each cooled cannoli shell with the ricotta filling.

Garnish (optional)
Dust the filled cannoli with additional powdered sugar or dip the ends in chopped pistachios for garnish.
