Preparing the Chicken

Rub the blackening seasoning evenly over both sides of the chicken breasts.

Preheat the grill to medium-high heat. Cook the seasoned chicken breasts for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Remove the chicken from the grill and let it rest for 5 minutes before slicing.

Prepare the Vegetables

While the chicken is resting, wash and chop the carrots, tomatoes, and red onion. Slice the Swiss cheese into thin strips.

In a large bowl, combine the mixed lettuce, chopped carrots, tomatoes, and red onion. Toss gently to mix.

Slice the rested chicken breasts and add them to the salad along with the Swiss cheese strips.
