Prepare Sausage

    Make the Sausage

    In a bowl, combine ground pork, fennel seeds, crushed red pepper flakes, minced garlic, salt, and black pepper. Mix thoroughly until well combined.

    Cook the Sausage

    In a large skillet over medium heat, add the sausage mixture. Cook, breaking it up into small pieces, until browned and cooked through, about 8-10 minutes. Remove from skillet and set aside.

Cook Broccoli Rabe

    Prepare Water

    In a large pot, bring salted water to a boil.

    Blanch the Broccoli Rabe

    Once the water is boiling, add the trimmed and chopped broccoli rabe. Blanch for 2-3 minutes until bright green and tender. Remove with a slotted spoon and transfer to an ice bath to stop cooking.

Cook Pasta

    Cook the Orecchiette

    In the same pot of boiling water, add the orecchiette pasta. Cook according to package instructions until al dente, usually about 10-12 minutes. Reserve 1 cup of pasta water, then drain the pasta.

Combine Ingredients

    Sauté and Combine

    In the same skillet used for the sausage, add olive oil and heat over medium heat. Add the cooked sausage and blanched broccoli rabe. Stir to combine and heat through.

    Add Sauce

    Pour in the Arrabiata sauce and add the cooked orecchiette. Toss everything together gently, adding reserved pasta water as needed to reach desired consistency.

    Serve

    Divide the pasta among plates, sprinkle generously with grated Pecorino Romano cheese, and serve immediately.
