    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Cheese Sauce

    In the same pot, melt 4 tablespoons of butter over medium heat. Whisk in 4 tablespoons of all-purpose flour and cook for about 1 minute to form a roux. Gradually whisk in 3 cups of milk, cooking until the mixture thickens and bubbles.

    Add Cheese

    Remove the pot from heat and stir in cheddar, gruyere, and parmesan cheeses until fully melted and smooth. Add salt and pepper to taste.

    Combine Pasta and Sauce

    Fold the cooked macaroni into the cheese sauce until well combined. If the mixture is too thick, add a little more milk to reach the desired consistency.

    Bake (Optional)

    For a baked version, preheat the oven to 350°F (175°C). Transfer the mac and cheese to a baking dish, sprinkle with extra cheese or breadcrumbs on top, and bake for 20-25 minutes until golden and bubbly.
