Preparation of Rabbit

Sear the Rabbit
In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the rabbit pieces and sear them for about 5-7 minutes on each side until golden brown. Remove the rabbit and set aside.

Add Wine and Mustards
Pour in the white wine, scraping the bottom of the skillet to deglaze. Stir in the Dijon and stoneground mustards and cook for an additional 2 minutes.

Finish with Cream and Rosemary
Once the rabbit is cooked, stir in the heavy cream and chopped rosemary. Simmer for an additional 5 minutes until the sauce thickens slightly.

Bake the Potatoes
Spread the potatoes on a baking tray and roast in the preheated oven for 25-30 minutes until golden and crispy, turning halfway through.
