Polenta Preparation

Boil Water

In a large saucepan, bring 4 cups of water to a boil over medium-high heat.

Add Cornmeal and Salt

Once boiling, slowly whisk in 1 cup of cornmeal and 1 tsp of salt to avoid lumps.

Cook Polenta

Reduce heat to low and continue to whisk the mixture for about 20-25 minutes until it thickens and pulls away from the sides of the pan.

Stir in Butter and Cheese

Remove from heat and stir in 2 tbs of butter and 1 cup of grated Parmesan cheese until melted and creamy.

Spinach Mixture Preparation

Heat Olive Oil

In a large skillet, heat 2 tbs of olive oil over medium heat.

Sauté Garlic

Add 3 minced cloves of garlic and sauté for 1 minute until fragrant.

Add Spinach

Add 6 cups of fresh spinach to the skillet and cook, stirring frequently, for about 3-5 minutes until wilted.

Season Spinach

Season with 0.5 tsp of salt, 0.25 tsp of black pepper, and 1 tbs of lemon juice. Stir well and remove from heat.

Assembly

Combine Polenta and Spinach

Spoon the creamy polenta onto plates and top with the sautéed spinach mixture.

Serve immediately while hot, garnished with additional Parmesan cheese if desired.
