Preparation of Ingredients

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the bucatini pasta and cook according to package instructions until al dente, usually about 9-11 minutes. Reserve 1 cup of pasta water before draining.

  2. 2

    Prepare the Guanciale

While the pasta cooks, cut the guanciale into small pieces. In a large skillet over medium heat, add the guanciale and cook until crispy, about 5-7 minutes. Remove from heat, but keep warm.

  3. 3

    Mix the Sauce

In a bowl, whisk together the eggs, finely grated Pecorino Romano cheese, and a generous amount of black pepper until smooth and creamy.

Combining Ingredients

  1. 4

    Combine Pasta and Guanciale

Once the pasta is cooked and drained, add it to the skillet with the guanciale. Toss to combine, ensuring the pasta is evenly coated with the rendered fat.

  2. 5

    Add the Egg Mixture

Remove the skillet from heat. Quickly pour the egg and cheese mixture over the hot pasta, tossing vigorously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

  3. 6

    Serve

Serve immediately with additional grated Pecorino Romano cheese and freshly cracked black pepper on top.
