    Preheat the Oven

    Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

    Mix Dry Ingredients

    In a large bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, salt, cinnamon, and sugar.

    Mix Wet Ingredients

    In another bowl, combine the grated zucchini, eggs, honey, vanilla extract, and melted coconut oil. Mix until well combined.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

    Fill Muffin Tin

    Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

    Bake

    Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.

    Cool

    Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
