    Make Pancake Batter

    In a large bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, whisk the milk, egg, melted butter, and vanilla extract. Combine the wet and dry ingredients until just mixed. Gently fold in the fresh blueberries.

    Cook Pancakes

    Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.

    Make Vanilla Cream

    In a mixing bowl, beat the heavy cream with a hand mixer until it starts to thicken. Gradually add powdered sugar and vanilla extract, then continue to whip until soft peaks form.

Assembly

    Serve Pancakes

    Stack the pancakes on a plate. Top with a generous dollop of vanilla cream, a mix of fresh berries, chopped pecans, and mint leaves. Drizzle with maple syrup if desired.
