    Prepare the Split Peas

    Rinse the split peas under cold water in a fine mesh strainer. Remove any debris or damaged peas.

    Sauté the Aromatics

    In a large pot over medium heat, add a drizzle of olive oil. Once hot, add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Garlic and Ham

    Stir in the minced garlic and diced ham hock. Cook for another 2-3 minutes until the garlic is fragrant.

    Combine Ingredients

    Add the rinsed split peas to the pot along with the vegetable broth, bay leaves, thyme, black pepper, and salt. Stir well to combine.

    Simmer the Soup

    Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 45 minutes to 1 hour or until the split peas are tender and the ham is falling off the bone.

    Remove the ham hock from the pot and set aside to cool slightly. Once cool enough to handle, shred the meat from the bone and return it to the pot.
