Prepare the Flax Egg
In a small bowl, mix 1 tablespoon of flax seeds with 3 tablespoons of water. Let it sit for about 5 minutes until it becomes gel-like.

Combine Dry Ingredients
In a large mixing bowl, combine the rolled oats, baking powder, and salt. Stir well to ensure even distribution.

Combine Wet and Dry Ingredients
Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat. Lightly grease with oil or cooking spray. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles appear on the surface, about 3-4 minutes. Flip and cook for another 2-3 minutes until golden brown.

Add Blueberries
Once flipped, gently sprinkle fresh blueberries on top of each pancake while they are cooking on the second side.

Serve
Stack the pancakes on a plate, dust with powdered sugar, and serve warm with additional blueberries and maple syrup if desired.
