    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from skillet and place on paper towels to drain excess fat. Once cooled, chop into small pieces.

    Caramelize the Onions

    In the same skillet, add the chopped onion and cook over medium-low heat until softened and caramelized, about 10-15 minutes. Stir occasionally to prevent burning.

    Prepare the Peppers and Garlic

    While the onions are caramelizing, finely chop the serrano peppers (remove seeds for less heat if desired) and mince the garlic cloves.

    Whisk the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook the Omelet

    Add olive oil to the skillet and heat over medium. Pour in the egg mixture and let it sit for about 1 minute until edges start to set.

    Add Fillings

    Sprinkle the caramelized onions, chopped bacon, serrano peppers, and minced garlic over one half of the omelet. Crumble the chevre and sprinkle cheddar cheese on top.

    Fold and Finish Cooking

    Carefully fold the omelet in half over the fillings and cook for an additional 2-3 minutes until the cheese melts and the eggs are fully cooked.

    Remove the omelet from the skillet, garnish with fresh cilantro, and serve immediately.
