Poached Eggs

Prepare the Water
In a large saucepan, bring 6 cups of water and 1 tablespoon of white vinegar to a gentle simmer over medium heat.

Poach the Eggs
Crack each egg into a separate small bowl. Create a gentle whirlpool in the simmering water and carefully slide in the eggs one at a time. Poach for 3-4 minutes until the whites are set and the yolks remain runny. Remove with a slotted spoon and set aside.

Mix Dry Ingredients
In a large bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of salt.

Cut in Butter
Cut 1 stick of unsalted butter into the flour mixture until it resembles coarse crumbs.

Add Milk
Stir in 3 tablespoons of milk until just combined. Do not overmix.

Bake the Biscuits
Turn the dough onto a floured surface and pat to about 1 inch thick. Cut out biscuits with a round cutter and place them on a baking sheet. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes until golden brown.
Sausage Patty

Prepare the Sausage Mix
In a bowl, combine 1 pound of ground pork with 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder. Mix until well combined.

Form and Cook Patties
Form the mixture into 4 patties. In a skillet over medium heat, cook the patties for 5-7 minutes per side until browned and cooked through.
Housemade Sausage Gravy

Cook Sausage Crumbles
Using the same skillet, crumble the cooked sausage patties and cook until browned.

Make the Roux
Sprinkle 1/4 cup of all-purpose flour over the sausage and stir to combine. Cook for 1-2 minutes.

Add Milk
Slowly whisk in 2 cups of milk, stirring constantly until the gravy thickens. Season with 1 teaspoon of black pepper and 1 teaspoon of salt.
Plating

Assemble the Dish
On a plate, layer a biscuit, top with a sausage patty, add a poached egg, and generously pour sausage gravy over the top.
