Cook the Pasta
In a large pot, bring water to a boil and add 1 tsp of salt. Add 2 cups of macaroni pasta and cook according to package instructions until al dente. Drain and set aside.

Make the Roux
In a medium saucepan, melt 4 tbs of unsalted butter over medium heat. Whisk in 1 tbs of all-purpose flour and cook for about 1-2 minutes until lightly golden.

Add Milk
Slowly whisk in 2 cups of milk, stirring constantly to avoid lumps. Continue cooking until the mixture thickens, about 5-7 minutes.

Incorporate Cheeses and Seasonings
Remove the saucepan from heat, then stir in 2 cups of shredded white cheddar cheese and 4 oz of softened cream cheese until melted and smooth. Add 1 tsp each of garlic powder, onion powder, black pepper, mustard powder, and paprika. Stir until well combined.
Combine and Serve

Combine Pasta and Sauce
In a large mixing bowl, combine the drained macaroni pasta with the cheese sauce, stirring until pasta is evenly coated.

Optional Topping
If desired, combine 1 cup of breadcrumbs with 1 tbs of grated Parmesan cheese and 1 tbs of olive oil. Sprinkle this mixture on top of the macaroni and cheese.

Transfer the macaroni and cheese to a greased baking dish and bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the topping is golden brown.
