Tempura Batter

    Prepare the Tempura Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in ice-cold water until smooth. Set aside.

Surimi-Crab and Lobster Salad

    Make the Salad

    In a separate bowl, combine surimi crab meat, chopped lobster meat, mayonnaise, lemon juice, chopped green onions, salt, and black pepper. Mix well and refrigerate until ready to use.

Spicy Tuna Mix

    Prepare the Spicy Tuna

    In another bowl, mix together chopped sushi-grade tuna, sriracha sauce, mayonnaise, sesame oil, and chopped green onions until well combined. Set aside.

Cream Cheese Mixture

    Prepare the Habanero Cream Cheese

    In a bowl, mix softened cream cheese with finely chopped habanero pepper to taste. Ensure it's well combined and set aside.

Frying the Roll

    Fry the Roll

    Heat vegetable oil in a deep frying pan over medium-high heat. Once the oil is hot, dip the prepared rolls in the tempura batter and carefully place them in the hot oil. Fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Assembly

    Assemble the Vegas Roll

    On a serving platter, place the fried roll and drizzle with key lime aioli, eel sauce, and spicy aioli. Sprinkle sesame seeds and chopped green onions on top for garnish. Serve immediately.
