    Prepare the Ingredients

    Dice the Ahi tuna, salmon, and yellowtail into small cubes. Cook the ebi shrimp if not pre-cooked and chop into bite-sized pieces. If you are using pre-made lobster salad, ensure it's ready for use. Cut the cucumber and red bell pepper into thin strips. Set aside.

    Prepare the Sushi Rice

    Cook sushi rice according to package instructions. Once cooked, allow it to cool slightly and mix with rice vinegar, sugar, and salt to taste.

Assembly

    Assemble the Roll

    Lay a sheet of pink soy paper on a bamboo sushi mat. Spread a thin layer of sushi rice over the paper, leaving about an inch at the top edge. Place a line of diced Ahi, salmon, yellowtail, ebi shrimp, surimi crab, and lobster salad across the center of the rice. Add cucumber and red bell pepper strips on top.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Once rolled, use a sharp knife to slice the roll into bite-sized pieces.

Serving

    Plate and Garnish

    Arrange the sushi pieces on a serving plate. Drizzle with key lime aioli and eel sauce over the top. Serve with sriracha on the side for those who want extra heat. Garnish with cilantro microgreens.
