Method

Prepare the Shrimp Scampi

    Melt Butter and Oil

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until melted.

    Sauté Garlic

    Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

    Cook Shrimp

    Add the shrimp to the skillet. Season with salt, black pepper, and red pepper flakes. Cook until the shrimp turn pink and opaque, about 3-4 minutes.

    Add Wine

    Pour in the white wine and let it simmer for 2-3 minutes until slightly reduced.

    Finish Sauce

    Stir in the remaining butter, lemon juice, and chopped parsley. Mix well to combine.

Cook the Capellini

    Boil Pasta

    In a large pot of boiling salted water, cook the capellini according to package instructions until al dente.

    Drain Pasta

    Drain the pasta and reserve about 1/2 cup of the pasta cooking water.

    Combine Pasta and Sauce

    Add the drained pasta to the skillet with the shrimp scampi sauce, tossing to combine. If the sauce is too thick, add a bit of the reserved pasta water.

Make the Garlic Bread

    Preheat Oven

    Preheat the oven to 375°F (190°C).

    Prepare Garlic Butter

    In a bowl, mix the softened butter, minced garlic, and chopped parsley until well combined.

    Butter the Bread

    Slice the loaf of bread in half lengthwise and spread the garlic butter evenly on both halves.

    Bake Garlic Bread

    Place the bread on a baking sheet and bake for about 10 minutes, or until golden and crispy.

Grill the Lemons

    Heat Grill Pan

    While the garlic bread is baking, heat a grill pan over medium heat.

    Grill Lemons

    Place the lemon halves cut-side down on the grill pan and grill for about 3-4 minutes until charred.
