Prime Rib Preparation

Prepare the Prime Rib
Preheat your smoker to 225°F (107°C). Season the prime rib with salt, black pepper, garlic powder, and smoked paprika. Place the prime rib on the smoker and cook until it reaches an internal temperature of 135°F (57°C) for medium-rare, approximately 4-5 hours. Remove from the smoker and let it rest for at least 30 minutes.

Make Garlic Chili Butter
In a small bowl, combine the softened butter, minced garlic, and chili flakes. Mix until well combined. Set aside.
Sandwich Assembly

Assemble the Sandwich
Preheat your oven to 375°F (190°C). Slice the hoagie rolls in half lengthwise. Spread the garlic chili butter on the inside of each roll. Place on a baking sheet and toast in the oven for about 5 minutes, or until golden brown. Layer the smoked Gouda on the bottom of each hoagie, followed by the sautéed mushrooms and onions, and finally thinly sliced prime rib. Spread horseradish cream on the top half of the roll and close the sandwich.
