Dumpling Dough Preparation

Mix the Dough
In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until the dough comes together.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a large mixing bowl, combine ground pork, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper. Mix until well combined.

Chill the Filling
Cover the filling mixture with plastic wrap and refrigerate for at least 20 minutes to allow flavors to meld.
Dumpling Assembly

Roll the Dough
After the dough has rested, divide it into small pieces (about 1 inch each). Roll each piece into a thin circle (about 3 inches in diameter) on a floured surface.

Fill the Dumplings
Place about 1 tablespoon of the pork filling in the center of each dough circle. Wet the edges with water, fold in half, and pinch to seal tightly.
Cooking the Potstickers

Pan-Fry the Potstickers
In a large skillet, heat 2 tablespoons of oil over medium-high heat. Add the potstickers in a single layer and cook for about 2-3 minutes until the bottoms are golden brown.

Steam the Potstickers
Carefully add 1/4 cup of water to the skillet and cover immediately. Let them steam for about 5 minutes until cooked through.

Remove and Serve
Remove the lid and let any remaining water evaporate. Serve the potstickers hot with dipping sauce.

In a small bowl, combine soy sauce, rice vinegar, chili oil, and sesame seeds. Stir well to combine.
