Method

Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, then reduce heat, cover, and simmer for 20 minutes.

    Season Rice

    Once the rice is cooked, transfer to a large bowl. In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds to dissolve, then pour over the rice. Gently fold the rice to evenly coat without mashing it. Let it cool to room temperature.

Make Spicy Yellowtail Mix

    Combine Ingredients

    In a medium bowl, mix the diced yellowtail, sriracha sauce, mayonnaise, and chopped green onions until well combined. Adjust the spiciness to taste.

Prepare Vegetables

    Slice Vegetables

    Julienne the cucumber, thinly slice the jalapeño, and slice the avocado. Set aside the Fresno chili and micro cilantro for garnish.

Assemble Sushi Rolls

    Prepare Nori Sheets

    Place a bamboo sushi mat on a clean surface and lay a nori sheet, shiny side down. Wet your hands to prevent sticking.

    Spread Rice

    With wet hands, take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Fillings

    In the center of the rice, add a line of the spicy yellowtail mix, followed by a few pieces of cucumber, jalapeño, avocado, and Fresno chili.

    Roll Sushi

    Using the bamboo mat, carefully lift the edge of the mat closest to you and begin rolling away from you, applying gentle pressure to form a tight roll. Moisten the top edge of the nori with a bit of water to seal the roll.

    Slice Rolls

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

    Garnish

    Sprinkle toasted sesame seeds over the sliced rolls and garnish with micro cilantro before serving.
