Preparation of Fish

    Dice the Fish

    Cut the Atlantic salmon and ahi loin into small, uniform cubes, about 1-inch in size. Place in a bowl and set aside.

Salsa Preparation

    Make the Salsa

    In a separate bowl, combine the diced pineapple, finely chopped jalapeño, and diced red bell pepper. Mix well and set aside to allow the flavors to meld.

Rice Cooking

    Prepare the Rice

    Cook the rice according to package instructions. Once cooked, stir in the chopped cilantro and lime juice. Fluff with a fork and keep warm.

Assembly

    Assemble the Bowl

    In a serving bowl, create a base with the cilantro lime rice. Top with mixed greens, followed by the diced fish. Add a generous scoop of the pineapple-jalapeño salsa on top.

    Add Toppings

    Sprinkle the shelled edamame and pepitas over the top. Season with smoked salt to taste. Drizzle chimichurri sauce over the entire bowl.
