Prepare the Broth

Make the Tonkatsu Broth
In a large pot, combine the pork bones and water. Bring to a boil over high heat, then reduce to a simmer. Skim off any foam that rises to the surface.

Add Flavorings
Add the ginger, garlic cloves (crushed), soy sauce, and miso paste to the pot. Simmer the broth for about 3 hours, adding water as needed to keep the bones covered.

Season the Broth
Once simmered, strain the broth to remove the solids. Return the broth to the pot and season with salt to taste. Keep warm on low heat.
Prepare Noodles and Toppings

Cook Udon Noodles
In a separate pot, bring water to a boil and cook the udon noodles according to package instructions. Drain and set aside.

Combine Ingredients
In a large bowl, add a portion of udon noodles, followed by the blanched vegetables, cooked shrimp, and pork dumplings.

Ladle the hot tonkatsu broth over the assembled ingredients in the bowl.
