Shrimp Marinade

    Marinate the Shrimp

    In a large bowl, combine tequila, lime juice, minced garlic, olive oil, cumin, salt, and black pepper. Add the shrimp, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

Mango Jalapeño Salsa

    Prepare the Salsa

    In a mixing bowl, combine diced mango, minced jalapeño, diced red onion, chopped cilantro, lime juice, and salt. Adjust the seasoning to taste and set aside.

Cilantro Lime Rice

    Cook the Rice

    In a medium saucepan, combine white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until water is absorbed. Remove from heat, fluff the rice with a fork, and stir in chopped cilantro, lime juice, and salt to taste.

Tacos Assembly

    Cook the Shrimp

    Heat a skillet over medium-high heat. Remove the shrimp from the marinade and cook for 2-3 minutes on each side or until cooked through.

    Assemble the Tacos

    Warm the corn tortillas in a dry skillet. Fill each tortilla with a portion of shredded cabbage, cooked shrimp, mango jalapeño salsa, crumbled cotija cheese, and drizzle with key lime aioli.

    Serve the tacos with cilantro lime rice on the side, lime wedges, and your choice of salsa.
