    Prepare the Potatoes

    Peel and dice the Yukon gold potatoes into small chunks. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.

    Prepare the Lobster

    If using cooked lobster, chop it into small pieces. If using raw lobster, steam or boil it until fully cooked, then chop into small pieces.

    Mix the Ingredients

    Once the potatoes are cooked, drain them and return them to the pot. Mash the potatoes until smooth. Add the chopped lobster meat, egg, and grated smoked Gouda cheese. Mix until well combined.

    Shape the Tots

    Using your hands, form the potato-lobster mixture into small, bite-sized tots.

    Fry the Tots

    In a large skillet, heat oil over medium heat. Once hot, carefully add the tots in batches, frying until golden brown on all sides, about 4-5 minutes per side. Remove and drain on paper towels.

Serving

    Garnish and Serve

    Chop the green onions finely and sprinkle over the fried tots. Serve hot with chipotle aioli and ranch dressing on the side for dipping.
