Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix Dry Ingredients
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Coat the Calamari
Dredge the calamari rings in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, without overcrowding the pan. Fry for about 2-3 minutes or until golden brown and crispy.

Drain the Calamari
Using a slotted spoon, remove the calamari from the oil and place them on a plate lined with paper towels to absorb excess oil.

Combine Ingredients
In a bowl, mix together the mayonnaise, key lime juice, honey, garlic powder, and a pinch of salt. Stir until well combined.
