Method

Tater Tots Preparation

    Prepare the Potatoes

    Peel and dice the russet potatoes into small cubes. Boil them in salted water until fork-tender, about 15 minutes.

    Mash the Potatoes

    Drain the boiled potatoes and let them cool slightly. Once cool enough to handle, mash them in a large bowl until smooth.

    Combine Ingredients

    Add cornstarch, salt, and black pepper to the mashed potatoes. Mix well until everything is fully combined.

    Form Tater Tots

    Using your hands, take a small amount of the potato mixture and shape it into a small oval or cylindrical shape. Repeat until all the mixture is shaped.

    Freeze Tater Tots

    Place the shaped tater tots on a lined baking sheet and freeze for at least 1 hour to firm them up.

Lobster Filling Preparation

    Prepare the Lobster Filling

    In a mixing bowl, combine the cooked lobster meat, cream cheese, chopped chives, lemon juice, garlic powder, and salt. Mix until well combined.

    Stuff the Tater Tots

    Remove the tater tots from the freezer. Using your finger or a small tool, create a cavity in each tater tot. Stuff each tot with the lobster filling and reshape as needed.

    Re-Freeze Stuffed Tater Tots

    Place the stuffed tater tots back on the baking sheet and freeze for an additional 30 minutes.

Frying and Dipping Sauce Preparation

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Tater Tots

    Carefully add the frozen lobster-stuffed tater tots to the hot oil in batches. Fry for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

    Prepare the Dipping Sauce

    In a small bowl, mix together mayonnaise, sriracha sauce, lemon juice, garlic powder, and salt to taste. Stir until smooth.
