Honey-chipotle Salmon Recipe

Method

Marinating the Salmon

    Prepare the Marinade

    In a small bowl, mix together the honey, chipotle peppers, lime juice, salt, and black pepper to create a glaze.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the honey-chipotle glaze over them. Allow to marinate for at least 30 minutes in the refrigerator.

Preparing the Mashed Potatoes

    Cook the Potatoes

    Peel and cube the russet potatoes. Place them in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, garlic powder, salt, and black pepper. Mash until smooth and creamy. Stir in the chopped green onions.

Grilling the Asparagus

    Prepare the Asparagus

    Trim the woody ends off the asparagus. In a bowl, toss the asparagus with olive oil, salt, and black pepper.

    Grill the Asparagus

    Preheat the grill to medium-high heat. Grill the asparagus for about 5-7 minutes, turning occasionally until tender and slightly charred.

Grilling the Salmon

    Prepare the Grill

    Preheat the grill to medium heat. Oil the grill grates to prevent sticking.

    Grill the Salmon

    Remove the salmon from the marinade and place it skin-side down on the grill. Grill for 6-8 minutes per side, brushing with additional glaze during the last 2 minutes of cooking.

Serving

    Plate the Dish

    On each plate, place a serving of smothered mashed potatoes, a piece of grilled salmon, and a portion of grilled asparagus.

    Drizzle balsamic glaze over the asparagus and serve with lime wedges on the side.
