Peel and Cut the Potatoes
Begin by peeling the russet potatoes using a vegetable peeler. Once peeled, cut each potato into even sticks, approximately 1/4 inch thick. This ensures they cook evenly.

Soak the Potato Sticks
Place the cut potato sticks in a bowl of cold water and soak them for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels. This step is crucial as excess moisture can cause the oil to splatter.

Fry the Potatoes (First Batch)
Carefully add a handful of the dried potato sticks to the hot oil. Fry them for about 4-5 minutes, or until they are lightly golden. Do not overcrowd the pot.

Remove the fries from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Let them cool for a few minutes.

Increase the oil temperature to 375°F (190°C) and once again, fry the cooled fries in batches for an additional 2-3 minutes until they are golden brown and crispy.
