Method

Fish

  1. 1

    Prepare the Batter

In a bowl, mix together the all-purpose flour, baking powder, salt, and pepper. Gradually whisk in the beer until the batter is smooth and well combined.

  2. 2

    Heat the Oil

In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

  3. 3

    Batter the Fish

Dip each Arctic cod fillet into the batter, ensuring it is completely coated.

  4. 4

    Fry the Fish

Carefully place the battered fish into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Fries

  1. 5

    Prepare the Potatoes

Peel the russet potatoes and cut them into thick strips to create fries.

  2. 6

    Fry the Fries

In the same oil used for the fish, carefully add the potato strips and fry for about 5-7 minutes or until golden and crispy. Season with salt to taste after removing from the oil.

Fuji Apple Slaw

  1. 7

    Prepare the Vegetables

Core and thinly slice the Fuji apples. In a large bowl, combine the sliced apples, shredded cabbage, and shredded carrots.

  2. 8

    Make the Dressing

In a separate bowl, mix together the mayonnaise, apple cider vinegar, sugar, salt, and pepper. Stir until smooth.

  3. 9

    Combine and Serve

Pour the dressing over the apple and cabbage mixture and toss to coat evenly. Refrigerate for at least 30 minutes before serving.

Tartar Sauce

  1. 10

    Mix the Ingredients

In a small bowl, combine the mayonnaise, finely chopped dill pickles, lemon juice, capers, and salt. Stir until well combined.

  2. 11

    Chill and Serve

Refrigerate the tartar sauce for at least 15 minutes before serving with the fish and chips.
