Method

Preparing the Salmon

    Soak the Cedar Plank

    Soak the cedar plank in water for at least 1 hour before grilling to prevent it from catching fire.

    Season the Salmon

    Pat the salmon fillet dry with paper towels. Rub the Rocky Mountain meat and fish rub over both sides of the salmon.

    Prepare the Grill

    Preheat your grill to medium-high heat. Place the soaked cedar plank on the grill grates. Close the lid and heat for about 5 minutes until it starts to crackle.

    Grill the Salmon

    Place the seasoned salmon skin-side down on the cedar plank. Close the lid and grill for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.

Making Loaded Mashed Potatoes

    Boil the Potatoes

    Place the peeled and cubed potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, sour cream, salt, and pepper. Mash until smooth and creamy.

    Add Cheese and Onions

    Stir in shredded cheddar cheese and chopped green onions until well combined. Adjust seasoning to taste.

Grilling Asparagus

    Prepare the Asparagus

    Trim the ends of the asparagus and place them in a bowl. Drizzle with olive oil, garlic powder, salt, and pepper. Toss to coat.

    Grill the Asparagus

    Place the seasoned asparagus directly on the grill grates. Grill for about 5-7 minutes, turning occasionally, until tender and slightly charred.

Charred Lemon

    Prepare the Lemon

    Slice the lemon in half and place it cut-side down on the grill during the last 5 minutes of cooking the salmon. Grill until charred.
