Preparation of Mahi Mahi

    Season the Fish

    Rinse the mahi mahi fillets under cold water and pat them dry with paper towels. Rub each fillet with 1 tablespoon of olive oil. Generously coat both sides of the fillets with blackening seasoning.

    Heat the Pan

    Preheat a large skillet over medium-high heat. Add 1 tablespoon of olive oil to the skillet and allow it to heat until shimmering.

    Cook the Fish

    Carefully place the seasoned mahi mahi fillets in the hot skillet. Cook for about 3-4 minutes on each side, or until the fish has a dark, charred crust and is cooked through.

    Prepare the Vegetables

    While the fish is cooking, wash and slice the zucchini and bell peppers into bite-sized pieces.

    Sauté the Vegetables

    In another skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute. Then, add the sliced zucchini and bell peppers, seasoning with salt and black pepper. Cook for about 5-7 minutes until the vegetables are tender-crisp.

    On a plate, place a generous serving of the sautéed vegetables. Top with the blackened mahi mahi fillets. Garnish with chopped cilantro and serve with lemon wedges on the side.
