We offer three different sausages: Jalapeño Cheddar (a spicy beef and pork sausage that we have shipped to us from Texas), Hill Country (a mild peppered beef and pork sausage also shipped up from Texas), Andouille (a spicy Cajun sausage).

Jalapeño Cheddar Sausage

Preparation

    Prepare the meat mixture

    In a large mixing bowl, combine the ground beef and ground pork for each type of sausage. Mix until well combined.

    Add spices and flavorings

    For each sausage type, add the respective spices, cheese (for Jalapeño Cheddar), and other ingredients to the meat mixture. Mix thoroughly until all ingredients are well incorporated.

    Prepare the casings

    Rinse the hog casings in cold water and soak them in warm water for about 30 minutes. Rinse again before using.

Stuffing the Sausages

    Stuff the casings

    Using a sausage stuffer, carefully fill the casings with the meat mixture, being careful not to overstuff. Twist sausages at desired lengths and tie off the ends.

    Prick air bubbles

    Use a needle to prick any air bubbles that may have formed in the sausages. This will help prevent them from bursting during cooking.

Cooking

    Cook the sausages

    Grill, bake, or pan-fry the sausages over medium heat until they reach an internal temperature of 160°F (70°C).

    Serve

    Let the sausages rest for a few minutes before serving. Enjoy with your favorite sides!
