Prepare the Brisket
Trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor. Pat it dry with paper towels.

Make the Rub
In a bowl, mix together kosher salt, black pepper, garlic powder, onion powder, paprika, and brown sugar.

Season the Brisket
Rub the spice mixture generously all over the brisket, ensuring it is evenly coated. Wrap in plastic wrap and let it rest in the refrigerator for at least 1 hour, preferably overnight.

Smoke the Brisket
Place the brisket fat side up on the smoker rack. Add the soaked wood chips to the smoker box and close the lid. Smoke for about 12 hours, or until the internal temperature reaches 195°F (90°C).
