Peach Simple Syrup

Cook syrup
Combine chopped peaches, granulated sugar, and water in a small saucepan over medium heat.

Bring mixture to a gentle simmer, stirring occasionally to dissolve sugar. Simmer for 8–10 minutes until peaches soften and liquid becomes slightly thickened and fragrant.

Remove saucepan from heat and stir in 1 tablespoon fresh lemon juice to brighten flavor.

Allow the mixture to cool slightly (5–10 minutes), then transfer to a fine-mesh sieve set over a bowl. Press solids with the back of a spoon to extract as much syrup as possible; discard or reserve the pulp for another use.

If you prefer a clearer syrup, strain again through a fine-mesh sieve or cheesecloth. Let syrup cool completely, then transfer to a sealed jar and refrigerate. Makes about 3/4 to 1 cup syrup; keeps 7–10 days refrigerated.

Fill a tall glass or Collins glass with 1 cup ice cubes.

Add 2 tablespoons peach simple syrup and 1 tablespoon fresh lemon juice over the ice.

Pour in 6 oz chilled sparkling water, then top with 2 oz chilled ginger ale for a slightly spicy sweetness. Stir gently 3–4 times to combine without flattening the bubbles.

Taste and adjust: add an extra teaspoon to 1 tablespoon peach syrup if you prefer sweeter, or a splash more lemon juice for brighter acidity.
