1. Chill glass
Place a rocks glass or coupe in the freezer or fill it with ice and water to chill while you prepare the cocktail.
2. Build and shake
Add bourbon, fresh lemon juice, simple syrup, amaro (if using), and Angostura bitters into a cocktail shaker. Fill the shaker about two-thirds full with ice.
3. Shake
Secure the shaker and shake vigorously for about 10–12 seconds, until the outside of the shaker feels very cold. This dilutes and chills the mixing components.
4. Strain and top with wine
Discard the ice/water from the chilled glass if used. Strain the shaken mixture into the chilled glass over fresh ice (if serving on the rocks) or strained neat into the coupe. Immediately pour the Cabernet Sauvignon over the back of a bar spoon or down the inside of the glass so it layers gently on top (approximately 4 oz).
5. Garnish and serve
Express the orange twist over the drink by holding it with the outer peel facing down and giving it a quick twist to release oils, then rub the rim with the peel and drop it into the glass. Add a dehydrated or fresh black cherry as an optional garnish. Serve immediately.
6. Notes on variations
For a lighter wine-forward version, reduce bourbon to 0.25 oz and increase Cabernet to 5 oz. To emphasize bitterness and depth, replace the optional amaro with 0.25 oz sweet vermouth and add another dash of bitters. Adjust simple syrup to taste if you prefer sweeter or drier profiles.
