Thyme-Berry Syrup

Make syrup
Combine 0.5 cups granulated sugar and 0.5 cups water in a small saucepan over medium heat. Stir until sugar dissolves and mixture comes to a gentle simmer.

Add 4 thyme sprigs and 0.5 cups fresh blueberries to the saucepan. Simmer gently for 5 minutes, pressing berries lightly with a spoon to release juices and infuse flavor.

Remove from heat and let the syrup steep with thyme and berries for 10 minutes to deepen flavor. After steeping, strain through a fine mesh sieve into a heatproof container, pressing solids to extract syrup. Discard solids and let syrup cool to room temperature. Makes about 3/4 cup syrup; reserve 0.5 oz (about 1 tablespoon) per cocktail.
Cocktail Assembly

Fill a copper mug or highball glass with 1 cup crushed ice.

Add 2 oz vodka and 0.75 oz fresh lime juice to the glass.

Add 0.5 oz (1 tablespoon) of the cooled thyme-berry syrup into the glass. If you prefer sweeter, add up to 0.75 oz.

Top with 4 oz chilled ginger beer. Gently stir once or twice to combine, taking care not to flatten the ginger beer.

Taste and adjust: add a splash more lime juice for brightness or 0.25 oz more syrup for sweetness.

Slap the fresh thyme sprig between your palms to release the aromatics and place it on top of the drink along with a lime wheel on the rim.
