Preparation

    Prepare the Vegetables

    Wash and slice the zucchini, bell peppers, onion, and mushrooms. Cut zucchini into half-moons, bell peppers into strips, onion into thin slices, and mushrooms into quarters.

    Marinate the Vegetables

    In a large bowl, combine the sliced vegetables with olive oil, salt, black pepper, and garlic powder. Toss until well-coated. Let marinate for at least 15 minutes.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Vegetables

    Place the marinated vegetables on the grill and cook for about 8-10 minutes, turning occasionally, until they are tender and have nice grill marks.

Assembling the Sandwich

    Layer the Ingredients

    Once the vegetables are grilled, take a hoagie roll and layer the grilled vegetables evenly. Place two slices of white American cheese on top of the vegetables.

    Melt the Cheese

    Return the assembled sandwich to the grill, close the lid, and allow it to cook for an additional 2-3 minutes until the cheese is melted.

    Add Fried Banana Peppers

    Remove the sandwich from the grill and add a generous amount of fried banana peppers on top.
