Cheese Mixture Preparation

Mix the Cheese
In a large mixing bowl, combine the shredded pepper jack cheese, softened cream cheese, and diced pimento peppers.

Add Seasonings
Add the garlic powder, onion powder, salt, and black pepper to the cheese mixture. Mix thoroughly until well combined.

Chill the Mixture
Cover the bowl with plastic wrap and refrigerate the cheese mixture for at least 30 minutes to allow the flavors to meld.

Prepare the Bread
Spread softened butter on one side of each slice of sourdough bread.

Assemble the Sandwich
On the non-buttered side of two slices, spread a generous amount of the chilled pepper jack pimento cheese mixture. Top with the other two slices, buttered side up.

Add Pepper Jelly
Once grilled, remove from the heat and spread a layer of pepper jelly on the top slice of each sandwich before serving.

Slice and Serve
Cut the sandwiches in half and serve warm, enjoying the melty cheese and sweet-spicy pepper jelly.
