Preparation

  1. 1

    Prepare the Meats

Season all meats (beef ribs, brisket, burnt end sausage, pulled pork, chopped brisket, and pulled chicken) with the BBQ rub, smoked paprika, salt, black pepper, garlic powder, and onion powder. Ensure even coating on all sides.

Cooking

  1. 2

    Cook the Beef Ribs

Preheat your smoker or grill to 250°F (121°C). Place the beef ribs on the smoker/grill bone side down and smoke for about 5 hours, or until they are tender and have a nice bark.

  2. 3

    Cook the Brisket

Place the brisket on the smoker/grill after the ribs have been cooking for about 2 hours. Cook the brisket for about 10-12 hours at 225°F (107°C), wrapping it in butcher paper when it reaches an internal temperature of 165°F (74°C) until it reaches 203°F (95°C).

  3. 4

    Cook the Sausage

Add the burnt end sausages to the smoker/grill during the last 1-2 hours of cooking the brisket. Cook until the sausages are heated through and have a nice smoke flavor.

  4. 5

Heat the Pulled Pork and Chopped Brisket

If the pulled pork and chopped brisket are pre-cooked, gently heat them in a pan on medium heat until warmed through, about 10-15 minutes.

  5. 6

    Cook the Pulled Chicken

If using raw chicken, season it similarly and cook it in the smoker/grill or oven at 375°F (190°C) for about 30-40 minutes, or until the internal temperature reaches 165°F (74°C). Shred it once cooked.

Final Assembly

  1. 7

    Serve the Carnivore Platter

On a large platter, arrange the beef ribs, brisket, burnt end sausage, pulled pork, chopped brisket, and pulled chicken. Drizzle with BBQ sauce and serve with sides of your choice.
