    Cook the Bacon

    In a large skillet over medium heat, cook the bacon slices until crispy. Once cooked, remove from skillet and let them drain on a paper towel. Chop into small pieces.

    Sauté Vegetables

    In the same skillet with the bacon drippings, add diced onion, bell pepper, and sliced jalapenos. Sauté for about 5-7 minutes until they are soft and slightly caramelized.

    Mix Filling

    In a large bowl, combine the pulled chicken, sautéed vegetables, chopped bacon, pepper jack cheese, and cheddar cheese. Mix until well combined.

    Assemble Quesadillas

    Lay out one tortilla on a flat surface. Spread a generous amount of the filling mixture on half of the tortilla. Fold the other half over to cover the filling. Repeat for the remaining tortillas.

    Cook Quesadillas

    Heat a clean skillet over medium-high heat. Once hot, carefully place a quesadilla in the skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted. Remove from skillet and let cool slightly before cutting into wedges.

    Serve the quesadillas warm with a side of sour cream and salsa for dipping.
