Wontons Preparation

Prepare the Filling
In a mixing bowl, combine the cream cheese, sharp cheddar cheese, diced pimentos, garlic powder, onion powder, paprika, salt, and black pepper. Mix until well combined and creamy.

Fill the Wontons
Place a wonton wrapper on a clean surface. Add a tablespoon of the cheese filling in the center of the wrapper. Moisten the edges of the wrapper with water using your finger or a brush.

Seal the Wontons
Fold the wonton in half diagonally to form a triangle. Press the edges to seal. For extra security, you can crimp the edges with a fork. Repeat with the remaining wrappers and filling.

Fry the Wontons
Heat vegetable oil in a deep pan over medium heat. Once hot, carefully place wontons in the oil, a few at a time, avoiding overcrowding. Fry for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.

Prepare the Sauce Base
In the same skillet, add the diced jalapeno and sauté for 2-3 minutes until softened. Add the cream cheese and sour cream, stirring until melted and smooth.

Season the Sauce
Stir in the garlic powder, lemon juice, salt, and black pepper. Mix well and add the crispy bacon back into the sauce. Cook for an additional minute.

Transfer the dipping sauce to a serving bowl and serve alongside the crispy pimento cheese wontons.
